Description:
Yeast is a living organism and is in the air around us. Yeast is a one-celled fungus that converts sugar and starch into carbon dioxide bubbles and alcohol. This has made it a useful ally in the production of bread, beer, and wine.
How to select:
Fresh yeast is ivory coloured with a yellowish hue and is soft and moist and should easily crumble. Make sure it is fresh smelling and there are no dark or dried places on the yeast.
Use:
Bread is made with baker's yeast, which creates lots of bubbles that become trapped in the dough, making the bread rise so it's light and airy when baked. A small amount of alcohol is also produced, but this burns off as the bread bakes. Beer yeast and wine yeast are used to convert sugar into alcohol and, in the case of beer and champagne, bubbles.
How to store:
Fresh yeast is stored loosely wrapped in refrigerator. It also keeps well frozen, for at least one year. It is mainly used by professionals as it is highly perishable and must be used within a short time of opening.
Health benefits:
Increases effectiveness of insulin, healthy blood circulatory system; synthesis of fatty acids, cholesterol and protein.
There are three main types of yeast :
Dried :
It is available in the form of dry granules. It is also used in bread making. While substituting dry yeast for fresh, only half the amount of yeast should be added as it is more concentrated.
Brewer's Yeast :
This is slightly liquid and is used mainly in the brewing of beer and ale.
