Masoor

Description: Masoor are the seeds of a bushy plant contained in long pods which are plucked, dried and threshed. The seeds within have a casing around them and are available whole or peeled and split.
How to select: when whole they are dark brown to greenish brown in colour, round and flattish and when split they are orange in colour.
Use: Combine cooked l Masoor, and chopped sweet peppers to make a delicious cold salad. Season with your favourite herbs and spices. Toss buckwheat soba noodles with cooked lentils, small broccoli florets and leeks. Dress with olive oil mixed with garlic and ginger. Moroccan lentil soup is easy to make. After cooking lentils, add diced vegetables of your choice and season with tamari, coriander, cumin, turmeric and cayenne.
How to store: Store Masoor in an airtight container in a cool, dry and dark place. Stored this way, they will keep for up to 12 months. If you purchase lentils at different times, store them separately since they may feature varying stages of dryness and therefore will require different cooking times. Cooked lentils will keep fresh in the refrigerator for about three days if placed in a covered container.
Health benefits: Masoor are an excellent source of molybdenum and folate. They are a very good source of dietary fiber and manganese and a good source of iron, protein, phosphorous, copper, thiamin and potassium.
Whole Masoor: Whole Masoor are dark brown to greenish black in colour, round and flattish. The fairly thick skin conceals a pinkish orange centre. Whole Masoor are musky, chewy and coarse. Whole Masoor take longer to cook and therefore need to be soaked before use. Because of their musky flavour, they are cooked, mashed and added to kebabs used in curries. They are also sprouted and cooked. They are versatile and go with onions, coconut, tamarind or tomatoes or rice dishes.
Split Masoor: Split Masoor are the familiar orange lentils found in grocery shops. Masoor are delicate in flavour and have a nutty, fresh taste. Split Masoor are useful as they cook faster and make a quick, nutritious meal. They are versatile and can be combined with a variety of vegetables or used in soups etc. .
