Description:
Lemon is a citrus fruit with a juicy acid pulp that is divided into segments. It has an aromatic rind that varies in colour from lime green to yellow, depending on the variety and ripeness of the fruit.
How to select:
Choose brightly coloured, smooth skinned limes. Brown areas on the skin do not affect flavour, but avoid limes with hard or shrivelled skin.
Use:
Lemon is used for its juice, rind and essential oils which are extracted from the rind.
How to store:
Refrigerate whole limes in a plastic bag up to 10 days. Cut limes can be stored up to 5 days.
Health benefits:
Lemons and limes are excellent sources of vitamin C.
Lemon Juice :
Lemon juice is obtained simply squeezing the lemon by hand or with a lemon squeezer. It is an anti-oxidant with which certain fruits and vegetables can be coated to prevent discolouration. It is also an ingredient in numerous dishes, appears in marinades and is also used in dressings for raw salads. Lemon juice is also used to season mayonnaise and salads, in ice creams, sorbets and various refreshing drinks.
Lemon Rind / Zest / Lemon Zest :
This is the outer peel of the lemon that is yellow or green in colour. The zest is obtained by grating the outer peel carefully, using a grater or a zester. Take care while grating to avoid the white layer (pith) under the skin as this imparts a bitter flavour to the food. Zest is used in cooking to flavour sauces or curries and in patisserie for flavouring cakes, cookies and mousses.
