Dainty sponge cake squares sandwiched with jam and coated with glace icing are a sure hit at all tea parties.

4 sliced cake
2 tbsp strawberry jam

For the glace icing
3/4 cup icing sugar
2 tbsp warm water
a few drops food colour
1 to 2 drops lemon juice

For the garnish
2 tbsp melted chocolate

  1. Sandwich the slices of the cake in 2 layers using the jam to make 2 sandwiches.
  2. Cut out squares or circles of these and place them on a metal cooling rack.
  3. Mix together all the ingredients for the icing in a bowl and keep aside.
  4. Pour the melted chocolate into a piping bag and keep aside.
  5. Using a tablespoon, pour the glace icing onto each individual sponge sandwich so that the icing coats all sides evenly.
  6. Pipe out a design or drizzle the chocolate over the icing.
  7. Allow to set for at least 20 to 30 minutes.
  8. Using a palette knife, carefully lift out each one and trim off any excess icing.
  9. Place on a serving platter and serve at room temperature.
