This sumptuous mixed vegetable soup has sharp accents of onion and garlic, which make it quite an exciting start to the meal.
In one smart turn, this soup is thickened with rolled oats rather than starchy options like corn flour or plain flour. This not only makes the soup healthy and fibre-rich, but also imparts a very interesting and enjoyable mouth-feel to it.
A garnish of coriander before serving the Garlicky Oats and Vegetable Soup lends a fresh aroma and herby flavour that will delight your senses!
Serve with Salads and Sandwiches , the all time favorite accompaniments for soups.
- Heat the oil in a deep non-stick pan, add the garlic and onions and sauté on a medium flame for 1 to 2 minutes.
- Add the mixed vegetables, 3 cups of water, salt and pepper, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
- Add the oats and coriander, mix well and cook on a medium flame for another 1 minute.
- Serve hot.
