Garlic Bread Soup

A delightful combination of garlic bread with clear soup in the Garlic bread soup recipe. Lightly fried or toasted bread slices are flavoured with garlic flakes and butter and served with a bowl of hot soup.

2 tbsp olive oil
2 cups chopped onions
1/4 cup finely chopped garlic
1 bayleaf (tejpatta)
Pinch of crushed red pepper
salt to taste
2 quarts vegetable stock
2 cups diced day old French bread
1/2 cup heavy cream
1/2 cup grated Parmigiano-Reggiano Cheese
1 tablespoon finely chopped fresh parsley leaves


  1. In a large saucepan, over medium heat, add the olive oil.
  2. When the oil is hot, add the onions, garlic, crushed bay leaf, and crushed red pepper.
  3. Season with salt. saute until slightly caramelized, about 6 to 8 minutes.
  4. Stir in the stock.
  5. Bring the liquid up to a boil, then reduce to a simmer and simmer for 40 minutes. turn the heat up and whisk in
