An interesting and colourful salad made from fibre rich ingredients like apple, cauliflower and dates further well complemented with an orange and curd dressing. Cleanse your system with this fibre rich salad.

Ingredients

2 cups unpeeled apple cubes
1/2 cup orange segments
1/3 cup sliced bananas
1 1/2 cups cauliflower florets
1 tsp oil
1/2 tbsp vinegar
salt and freshly ground black pepper powder to taste
4 dates (khajur) , chopped
1/3 cup bananas , sliced
1/2 tsp lemon juice
1/2 tsp grated lemon rind

For The Orange Dressing
1/2 cup thick fresh low fat curds (dahi)
4 tsp orange juice
1/2 tsp mustard (rai / sarson) powder
1/2 tsp powdered sugar
a pinch salt

Method
  1. For the orange dressing, combine all the ingredients in a bowl and mix very well. Refrigerate for at least an hour.
  2. Steam the cauliflower florets in a steamer for 5 minutes and cool completely.
  3. Add the oil, vinegar, salt and pepper, mix well and keep aside to marinate for 15-20 minutes.
  4. Add all the remaining ingredients and mix well.
  5. Serve chilled with orange dressing.
