12 baby corns
oil for deep-frying

For The Batter
4 tbsp cornflour
2 tsp oil
1/2 tsp baking powder
salt and freshly ground black pepper powder to taste

To Serve
spicy chilli-garlic sauce
green garlic sauce

  1. Cut each baby corn into 2 to 3 strips.
  2. Mix the ingredients for the batter and add enough water to make a thick batter.
  3. Dip the baby corn strips in the batter and deep fry in oil.
  4. Serve hot with chilli garlic sauce and green garlic sauce.

  1. Variation : Fried Onion Rings :
  2. Instead of baby corn, use 2 onions, sliced into rings.
  3. Loosen out the rings, dip into the batter and deep fry in oil.
