Fresh Fruits with Coconut Cream Sauce

Fresh fruit topped with a coconut flavoured sauce.

Ingredients


fresh seasonal fruits

For the coconut cream sauce
1 cup coconut cream
4 tsp cornflour
5 tbsp sugar
2 tbsp fresh cream
1/4 tsp rose essence

Method

    For the coconut cream sauce

    1. Dissolve the cornflour in 1 cup of water.
    2. Heat the coconut cream with the sugar and when it comes to the boil, add the cornflour mixed with water.
    3. Simmer for 1 minute and strain.
    4. Cool completely.
    5. Add the fresh cream sauce on the top of the fruit.
    6. Refrigerate till chilled.

    How to proceed

    1. Arrange the fruits in serving bowl.
    2. Pour the coconut cream sauce on top of the fruit.
    3. Serve chilled, garnished with mint leaves.

    Tips
    1. Serve this on a bed of crushed ice.
    2. You can use a melon scoop to get round balls of fruit.
