Did you know that this classic soup in its original form dates back to the roman times?! the classic soup experienced a renaissance of sorts thanks to french cuisine. The trick here is to chop the onions really fine. Cheese thickens the broth while mustard imparts a heady, pungent flavour. French onion soup is always served by pouring ladles of soup over a cheese crouton placed in a bowl. This soup is delectable and worth trying. Enjoy!

Ingredients

2 tbsp butter
1 cup thinly sliced onions
5 tbsp grated processed cheese (preferably cooking cheese)
1 tsp mustard (rai / sarson) paste , readily available in the market
salt to taste

For Serving
6 cheese croutons

Method
  1. Heat the butter in a deep non-stick pan, add the onions and sauté on a medium flame till they turn translucent.
  2. Add 5 cups of water, 3 tbsp of cheese, mustard and salt, and mix well.
  3. Bring to boil and simmer for 4 to 5 minutes.
  4. Just before serving, pour equal quantities of the soup in 6 individual bowls and place a cheese crouton in the centre of each bowl.
  5. Serve immediately.

Handy tip :

  1. The cheese croutons should be made just before serving.
