This is a gorgeous rich ice-cream and is a must for all these who love dry fruits. Figs are rich in fibre and iron and both these nutrients play an important role in our diet. Serve small scoops, as this is a very rich ice-cream.

Ingredients


100 gms (15 nos.) dried figs (anjeer)
3 1/2 cups milk
1 cup condensed milk
1/4 cup milk powder

Method
  1. Cook the figs with 1½ cups of milk. Simmer till the figs are soft and the milk has nearly evaporated. Cool completely.
  2. Purée the fig mixture in a blender.
  3. Combine the fig purée, the remaining milk, the condensed milk and milk powder and whisk well so that no lumps remain.
  4. Mix well and pour into a shallow container. Cover and freeze till it is almost set.
  5. Divide the mixture into 2 batches and churn each batch separately in a blender till it is smooth and creamy.
  6. Transfer both batches into a shallow container. Cover and freeze till firm.
  7. Scoop and serve.
