For The Puris
1 cup rajgira flour
2 tbsp oil
1/4 tsp black salt (sanchal)
luke warm water to knead the dough
oil for deep frying

For The Pani
1 cup chopped coriander (dhania)
1/2 cup mint leaves (phudina) , optional
2 tbsp tamarind (imli) pulp
rock salt to taste
1/2 tsp green chilli paste
1/2 tsp freshly ground black pepper powder
1/2 tsp sugar

To Be Mixed Together For The Filling
1/2 cup boiled and mashed potatoes
salt and freshly ground black pepper powder to taste
2 tbsp tamarind (imli) chutney

For the puris

  1. Combine all the ingredients and knead into a stiff dough.
  2. Cover with a wet muslin cloth and keep aside for 30 minutes.
  3. Divide the dough into small equal portions and shape them into small balls.
  4. Roll them into small puris.
  5. Heat the oil in a kadhai and deep fry the puris till they turn golden brown and crisp.
  6. Keep aside.

For the pani

  1. Combine all the ingredients and blend in a mixer till smooth.
  2. Keep in the refrigerator till chilled. Keep aside.

How to proceed

  1. Fill small portions of the filling in the puris.
  2. Fill water and serve immediately.
