Falooda, distinctly flavoured with rose syrup, this is one dessert which is not to be missed. Although it can be served with any ice-cream of your choice, kulfi and falooda is the real match made in heaven. You will find ready-dried falooda in the market, which just needs to be re-hydrated before use.

Makes 4 faloodas

6 tbsp rose syrup
4 tsp soaked garden cress seeds
4 tbsp soaked falooda sev (readily available in the market) , refer handy tip
4 tbsp chopped strawberries flavoured jelly , refer handy tip
4 cups chilled milk
4 scoops of vanilla ice-cream (readily available in the market)

For The Garnish
4 tsp chopped strawberries flavoured jelly

  1. Place 1½ tbsp of rose syrup in a tall glass, top with 1 tsp of garden cress seeds, 1 tbsp of falooda sev and 1 tbsp of jelly.
  2. Pour 1 cup of milk over it gently so that the milk does not mix with the syrup, refer handy tip 3.
  3. Top with a scoop of ice-cream, garnish with 1 tsp of jelly and serve immediately.
  4. Repeat with the remaining ingredients to make 3 more faloodas.


  1. Cut a kulfi into 4 equal pieces and place them on a plate.
  2. Top with 1 tsp of garden cress seeds, 1/2 tbsp of falooda sev and 1 tbsp of rose syrup and serve immediately.

Handy tip

  1. Falooda sev is readily available in the market. It needs to be soaked in water, drained and used as required.
  2. To make strawberry jelly, follow the instructions on the packet. Use the quantities as required in this recipe. You can serve the remaining jelly with ice-cream or use as required.
  3. To unmould the kulfi, allow the kulfi moulds to remain outside the refrigerator for 5 minutes and then unmould by inserting a wooden skewer stick or a fork, in the centre of the kulfi and pulling it out. Alternatively, you can purchase readymade kulfi from your local kulfiwala.
  4. Place an inverted tablespoon or dessert spoon at a 45º angle over the falooda glass and pour the milk over the spoon. The milk will slide gently to form a layer over the syrup and won’t get mixed with the bottom layer.

This is one of my favourite desert.. I love it to the core. The subza seeds, jelly, ice cream, rose syrup and falooda sev..wow what a combination. It is just perfect the way i wanted. Not too sweet nor bland. Just has the perfect taste.. Loved it..
