Economical Salads - 04 July 2007
Salads – so rich in proteins and fibre - work wonders for our health. They make a light and easy meal during summers when the scorching heat just kills your appetite and also a great alternative to greasy fat laden snacks when you are cooped in your house during the rains.
But alas! Just when you feel like having salads the most, the prices of lettuce and other greens are sky high and they are not so fresh as well.
That’s when I stumbled upon the idea of making economical salads using ingredients like rajma, soya, pavta, broken wheat, pasta, carrots, cucumber, bean sprouts, tomatoes, peas, potatoes etc. which are available in plenty through the year and do not cost an arm and a leg. Combined with just a little lettuce, spring onions and tossed in curds, honey, lemon juice…they make absolutely wonderful salads.
I’ve put together a few Economical Salads for you. I’m sure they’ll inspire you to think up your own combinations, which will keep you smiling right through the summer.
