A delicious chocolate sponge, in a bittersweet fantasy of chocolate cake sandwiched with pineapple, coconut and white chocolate mousse, topped with a chocolate glaze.

Ingredients



For the sponge cake
1 Eggless Chocolate Sponge Cake.

To be mixed into a soaking syrup
2 tbsp powdered sugar
1 cup water

For the white chocolate filling
1 cup grated white chocolate
1 cup whipped cream
2 pineapple slices, finely chopped
2 tbsp dessicated coconut

For the dark chocolate topping
1/2 cup grated dark chocolate
1/2 cup whipped cream

For the garnish
flaked almonds (badam)
orange segments
whipped cream

Method

    For the white chocolate filling

    1. Melt the grated white chocolate over a double boiler till it is a smooth paste. Cool slightly.
    2. Fold in the whipped cream gently along with chopped pineapple and desiccated coconut.
    3. Keep aside.

    For the dark chocolate

    1. Melt the grated dark chocolate over a double boiler. Cool slightly.
    2. Fold in the whipped cream. Keep aside.
    3. Make the topping once the cake has been sandwiched and refrigerated.

    How to proceed

    1. Slice the sponge cake horizontally into 2 slices.
    2. Place the lower half on a serving dish and generously soak with the refrigerated soaking syrup.
    3. Spread the white chocolate filling mixture evenly on this layer. Use a 75 mm. (3") strip of greaseproof paper to line the sides of the cake, so that the filling does not spill over.
    4. Top with the other layer of sponge and soak it well with the refrigerated soaking syrup.
    5. Refrigerate for at least 1 hour, till the filling mixture has set.
    6. Remove the greaseproof paper, then top with a thin layer of the dark chocolate topping.
    7. Decorate the sides with almonds flakes.
    8. On the top, pipe swirls whipped cream and orange segments.

    Tips
    1. Instead of using a double boiler, you can also microwave the chocolate for 5 to 7 seconds.
