Tat the heart of mumbai’s roadside snack culture is the dry masala powder, a savoury combination of pepper, cumin seeds and cloves. In reality, it is the black salt that breathes life into these spices, as it enhances the pungency and gives the aroma and flavour typical of chaats.
- Combine the cumin seeds, peppercorns and cloves and blend in a mixer to a fine powder.
- Transfer to a bowl, add the salt and black salt and mix well. Use as required or store in an air-tight bottle.
