Double Decker Tostadas

Ingredients



For the tortillas
1 1/2 cups plain flour (maida)
3/4 cup whole wheat flour (gehun ka atta)
4 tsp oil
1/2 tsp salt
oil for deep-frying

For the stuffing
3/4 cup red rajma (kidney beans)
1 onion, chopped
2 tbsp tomato ketchup
2 tbsp butter
2 tbsp oil or ghee
salt to taste

Other ingredients
10 tbsp grated processed cheese
2 tbsp Sour Cream
6 tsp Hot Sauce
6 tsp Green Sauce

For the topping
1 tbsp finely chopped spring onions
a few olive slices
shredded lettuce
grated carrot
50 gms shredded cabbage

Method

    For the torillas

    1. Mix the flours, oil and salt and make a dough by adding water.
    2. Roll out the dough into 75 to 100 mm. diameter rounds with help of flour.
    3. Prick lightly with a fork and deep fry in oil on a medium flame until crisp.

    For the stuffing

    1. Soak the beans overnight.
    2. Next day, cook in a pressure cooker. Drain.
    3. Heat the oil and fry the onion for 1 minute.
    4. Add the beans, tomato ketchup, butter and salt and cook for 5 minutes.
    5. When cooked, mash the beans lightly.

    How to proceed

    1. In a baking dish, put 1 tortilla and spread 2 tablespoons of the stuffing and 1 tablespoon of cheese. Spread 1 teaspoon of hot sauce and 1 teaspoon of green sauce. Cover with another tortilla on top.
    2. Make similar separate stacks for the remaining tortillas.
    3. Spread the green sauce and hot sauce and thereafter the balance cheese on top.
    4. Grill in a hot oven at 200 degree C (400 degree F) until the cheese melts.
    5. Top with spring onion. sliced olives, shredded lettuce, carrots and cabbage and serve immediately.
