Dinner Rolls (Quick Method)

Ingredients


450 gms plain flour (maida)
25 gms ghee or margarine or butter
20 gms fresh yeast or 2 teaspoons dry yeast
1 1/2 tsp levelled, sugar
1 tsp level salt

Method
  1. Sieve the flour very well.
  2. Mix the sugar and yeast in 1 teacup of warm water and stir until the yeast dissolves.
  3. Add this liquid to the flour and make a soft dough by adding some more warm water.
  4. Knead the dough for at least 6 to 7 minutes.
  5. Mix the ghee and salt very well.
  6. Add to the dough and mix well.
  7. Keep the dough under a wet cloth for 20 minutes.
  8. Knead for 1 minute.
  9. Divide the dough into small pieces and shape into rolls.
  10. Put on a well-greased baking tin leaving enough margin for expansion.
  11. Leave the tin in a closed cupboard for 20 minutes.
  12. Bake in a hot oven at 450°F for 10 minutes. Reduce the temperature to 400°F and bake for a further 15 to 20 minutes.
  13. Remove from the tin and and brush on top with ghee.
  14. Serve hot in folded napkins with butter.

Tips
  1. Notes : i) If using dry yeast, follow the procedure given for bread loaf.
  2. ii) To top rolls, proceed as under at step 12.
  3. - For a crisp top, brush with melted butter before baking.
  4. - For a soft crust, brush the crust liberally with milk towards the end of the baking time.
  5. - For glaze, brush with egg and milk or water ot milk before baking.
  6. - For floury rolls, brush with milk and sprinkle with flour.
  7. - Top with khus-khus.
  8. VARIATION : BROWN BREAD DINNER ROLLS
  9. Use wheat flour instead of plain flour and proceed the same way as above, using 1 teaspoon sugar extra.
