Low fat paneer, tomato sauce and nourishing vegetables have turned a calorie-laden pizza to a humble dieter’s pizza with equally tempting flavours.

Ingredients


For The Pizza Base
2 cups whole wheat flour (gehun ka atta)
2 tsp (10 gms) crumbled fresh yeast
a pinch of sugar
1 tsp salt

For The Tomato Sauce
4 large tomatoes
1/2 cup chopped onions
3 to 4 peppercorns (kalimirch)
1 bayleaf
1/4 cup finely chopped capsicum
1 tsp chopped garlic (lehsun)
1/2 tsp dried oregano
1 tsp oil
salt to taste

For The Cheesy Topping
1/4 cup low-fat cream cheese
2 tbsp low-fat milk (99.7% fat-free)
1/2 tsp prepared mustard

Other Ingredients
1/2 cup sliced zucchini (optional)
1/2 cup sliced onions
1 tomato , sliced
10 to 12 basil leaves
1 tsp oil for greasing

Method
For the pizza base

  1. Combine all the ingredients in a bowl. Knead it into a soft dough using enough water until it is smooth and elastic.
  2. Cover the dough with a wet muslin cloth and allow it to prove till it doubles in volume (approx. 15 to 20 minutes)
  3. Press the dough lightly to remove the air.
  4. Divide the dough into 2 equal parts.
  5. Roll out each portion into a circle of 250 mm. (10”) diameter and 6 mm. (¼”) thickness.

For the tomato sauce

  1. Blanch the tomatoes in boiling water.
  2. Peel, cut into quarters and deseed the tomatoes. Chop finely and keep the tomatoes aside.
  3. Heat the oil and add the peppercorns and bay leaf and sauté for a few seconds.
  4. Add the onions, capsicum and garlic and sauté for a few seconds.
  5. Add the chopped tomato pulp and allow it to simmer for 10 to 15 minutes until the sauce reduces a little.
  6. Add salt and simmer for some more time.
  7. Finally, add the oregano and mix well. Remove the bay leaves and peppercorns and discard. Keep aside.

For the cheesy topping

  1. Blend the cream cheese, milk and prepared mustard to a thick puree in a liquidizer and keep aside.

How to proceed

  1. Place one pizza base on a lightly greased baking tray.
  2. Spread half the tomato sauce on the pizza base and top with half the cheesy topping mixture.
  3. Arrange half the zucchini, onions and tomato slices on the pizza and top with some basil leaves.
  4. Bake in a pre heated over at 200°c (400°f) for 10 to 15 minutes or until the base is evenly browned. Top with some more basil leaves.
  5. Make another pizza using the other pizza base and the remaining ingredients.
  6. Serve hot

Handy tip:

  1. Prepared mustard is a proprietary product available at most provision stored. It’s a yellow colored paste that has a sharp vinegar-like taste and is also called french style mustard.
