Dates are an all time favourite with Middle Eastern countries. Here cooked with rice it creates an appetizing recipe.

Ingredients


oil for deep-frying
1/4 cup sliced onions
1 1/4 cups long grained rice (basmati)
3 tbsp ghee
salt to taste
1/4 cup almonds (badam)
1/4 cup chopped seedless dates (khajur)
1/4 cup raisins (kismis)
1 tsp rose water
2 tbsp milk
1/2 tsp cardamom (elaichi) powder
1 tbsp chopped coriander (dhania) for the garnish

Method
  1. Heat the oil in a kadhai and deep-fry the onion slices on a medium flame till they are golden brown. Drain on absorbent paper and keep aside for the garnish.
  2. Clean, wash and soak the rice for 15 minutes.
  3. Boil a vesselful of water with the salt. Drain the rice, add it to the water and cook till the rice is done (approx.10 minutes). Drain again and keep aside.
  4. Heat the ghee in a pan add the almonds and fry till they turn golden brown.
  5. Add the dates, raisins, cooked rice, rosewater, milk and cardamom powder.
  6. Mix gently and cook for 5 minutes.
  7. Serve hot garnished with coriander and fried onions.
