Dates are full of iron and zinc and a great low-calorie ingredient for desserts. Here they combine with nuts and spices to make a delicious stuffing.

Ingredients



For the pancakes
1/2 cup rice flour (chawal ka atta)
2 tbsp cornflour
2 tbsp low fat milk, page 98, mixed with 3 tablespoons water
2 tsp sugar
a pinch of salt

To be mixed into a stuffing
1/4 cup deseeded and chopped dates (khajur)
1 tbsp chopped raisins (kismis)
1 tbsp chopped cashewnuts (kaju)
1 tsp chopped walnuts (akhrot)
2 tbsp tutti-frutti
a pinch of nutmeg (jaiphal)
2 pinches of cinnamon (dalchini) powder
a pinch of cloves (laung / lavang) powder

Other ingredients
1 tsp oil for cooking
1/2 tsp oil for greasing

Method

    For the pancakes

    1. Mix all the ingredients together to make a batter of pouring consistency.
    2. Divide it into 6 equal portions.
    3. Grease a non-stick pan with little oil, pour a portion of the batter on it and spread with a laddle to make a 125 mm. (5") diameter pancake.
    4. Cook on both sides, using a little oil, till light spots appear. Keep aside.

    How to proceed

    1. Place a pancake on a flat surface, put ¼th of the stuffing on it.
    2. Fold to make a semi-circle.
    3. Repeat to make 5 more pancakes. Serve immediately.
