Curds or "dahi" is an item that Indian households consume at all times of the day. But what is essential to make a good chaat are good fresh curds. For those who love thick curds, use full fat milk, along with a tablespoon of milk powder dissolved in milk and needless to say, use skimmed milk for low calorie curds.

Preparation Time: 
Cooking Time : 6 hours.
Makes 5 cups.

Ingredients


1 ltr full fat milk
1 tbsp curds (dahi) (made the previous day)

Method
  1. Warm the milk.
  2. Add the curds, mix well and cover.
  3. Keep aside until the curds set (approximately 5 to 6 hours). During the cold climate, place inside a cupboard or closed oven to set.
  4. Refrigerate after the curds have set and use as required.
