Cucumber And Lettuce Cream Soup

Ingredients


1 medium cucumber
1 large sized lettuce head
2 tbsp cornflour
1 1/2 cups cold milk
2 tbsp fresh cream
1 tbsp butter
salt and black pepper (kalimirch) powder to taste
bread croutons to serve

Method
  1. Peel and slice the cucumber.
  2. Wash and shred the lettuce.
  3. Heat the butter and cook the cucumber and lettuce for a few minutes.
  4. Add 5 teacups of water and cook for 10 minutes. Blend in a liquidiser.
  5. Add the cornflour to the milk, mix well and add to the soup. Stir continuously and cook until it thickens.
  6. Add salt and pepper. Add the cream and reheat taking care that the soup is not over boiled.
  7. Serve hot.
