Crunchy salad smothered with olive flavoured creamy dressing.

Ingredients



For the dressing
2 tbsp cheese spread
1/4 cup fresh cream
1 tbsp finely chopped olives
salt to taste

Other ingredients
3 leftover bread slices
2 cups torn iceberg lettuce
1/4 cup thinly sliced spring onions whites
1/4 cup finely chopped spring onion greens
1/2 cup paneer (cottagte cheese) cubes
oil for deep-frying

Method

    For the dressing

    1. Combine all the ingredients and whisk till smooth. Keep aside.

    How to proceed

    1. Cut and discard the crusts of the bread slices.
    2. Cut the bread into 12 mm. (½") square cubes.
    3. Heat the oil in a kadhai and deep fry on a medium flame till golden brown and crisp to make croutons.
    4. Drain on absorbent paper and keep aside to cool.
    5. Add all the remaining ingredients along with the dressing and toss gently.
    6. Serve immediately.
