Crispy rice noodles is a rather unusual preparation of fried rice noodles topped with a salad of lettuce, carrots, cabbage and spring onions, and a tangy sweet and sour dressing.
- For the dressing
- Combine all the ingredients in a saucepan with 3/4 cup of water and simmer till it is a thick syrup.
- Cool and keep aside.
- Deep fry the rice noodles in hot oil and drain on absorbent paper.
- Place the fried noodles on a serving plate, top with the salad and pour the dressing over.
- Serve immediately.
