This is partially cooked rice that is sun dried and stored. It is then deep fried just before serving. We have used these in the recipe of Crispy Rice Soup.

Ingredients

Method
  1. Boil plenty of water in a pan. Add the rice and cook.
  2. When the rice is 90% cooked, drain out all the water.
  3. Spread the rice on a large tray, cover with a piece of cloth and sun dry until crisp.
  4. Store in an air-tight container.
  5. When required, place the dried rice in a strainer and deep fry for a few seconds till the rice puffs up. Drain on absorbent paper. Use immediately.

Tips
  1. The dried rice lasts for 3 to 4 months, if stored in an air-tight container.
