A pineapple and strawberry combination interlaced between pancakes topped with powdered sugar and grilled till crusty.

Ingredients



For the pancakes
Pancakes

For the filling
6 pineapple slices, chopped
4 tbsp sliced strawberries
2 tbsp brown sugar
2 tbsp butter

Other ingredients
melted butter for brushing
1 tbsp powdered sugar

For serving
whipped cream
Custard Sauce

Method

    For the pancakes

    1. Make the batter as specified in the basic recipe.
    2. Make 4 large pancakes of about 150 mm. (6") diameter.
    3. Keep aside.

    For the filling

    1. Heat the butter, add the brown sugar, pineapple and strawberries and cook for a while.

    How to proceed

    1. Place one pancake on a greased overproof dish, cover with a little of the filling mixture and another pancake.
    2. Continue to stack the remaining pancakes with all the filling ending with a pancake on top.
    3. Brush with the melted butter and sprinkle the powdered sugar on top.
    4. Bake in a hot oven at 200 degree C (400 degree F) for 10 minutes till golden in colour.
    5. Cut into wedges and serve warm with whipped cream or custard sauce.

    Tips
    1. You can use any seasonal fruits in case strawberries are out of season.
    2. To make CREPES GEORGETTE FLAMBE warm 4 tablespoons of brandy in a big spoon, set alight and pour over the pancakes.
    3. Peaches can also be used instead of pineapple.
