Ingredients


For the pancakes
1/3 cup plain flour (maida)
1/3 cup cornflour
1/3 cup milk
1/3 cup water
2 tsp melted ghee or butter

For the pear filling
6 fresh pear or 1 small can (450 grams) pears
3 tbsp sugar (for fresh pears only)
1 tsp lemon juice
1/2 tsp grated lemon rind

For the topping
100 gms (4 oz.) fresh cream
1 1/2 tbsp sugar
25 gms grated bitter chocolate
2 tbsp almond (badam) slivers
Vanilla Ice-cream to serve

Method
For the pancakes

  1. Mix the ingredients and prepare pancakes on a non-stick frying pan using ghee.

For the pear filling

  1. Peel, core and slice the pears.
  2. Add the sugar, lemon juice, lemon rind and 3/4 teacup of water and cook until soft.
  3. Chop finely. Keep aside the juice.

How to proceed

  1. Beat the cream with the sugar.
  2. To the chocolate, add 1 tablespoon of the cream and heat till it melts. Mix with the rest of the cream.
  3. Fill each pancake with some pear filling along with a little of its juices.
  4. Place the pancakes on a baking dish and spread the sweetened cream on them. Sprinkle the sliced almonds on top and bake in a hot oven at 200 degree C (400 degree F) for 5 minutes.
  5. Serve warm with vanilla ice-cream.
