Creole Banana Salad

A rich salad with a tropical flavour.

Serves 6 to 8.

2 large ripe firm bananas
2 apples finely chopped
100 gms seedless grapes (optional)
1 small can (450 grams) pineapple tidbits
1 tbsp lemon juice
2 cups Steamed Rice (each grain should be seperate)
2 tbsp finely chopped walnuts (akhrot)
2 tbsp grated fresh coconut
1 head lettuce
salt to taste

To be mixed into a dressing
1/2 cup mayonnaise
1/2 tsp tabasco sauce (optional)
2 tbsp fresh cream

  1. Slice the bananas. Chop the pineapples and keep aside the syrup.
  2. Mix the fruits, add the lemon juice and a little pineapple syrup. Chill.
  3. When chilled, drain.
  4. Add the rice, dressing, walnuts and salt. Mix well.
  5. Pile the salad on a bed of lettuce leaves and sprinkle grated coconut on top.
  6. Serve cold.

A new and different type of recipe. Fruits and rice with the mayo dressing tastes awesome. Rice give a different mouth-feel when mixed with the fruits.
