Creamy Spinach Toast

Ingredients



For the toast
10 slices whole wheat bread

For the spinach stuffing
3 cups spinach (palak), chopped
1/2 cup chopped onions
2 green chillies, chopped
a pinch of baking soda
3/4 cup low fat milk
2 tsp cornflour
1 tbsp low fat butter
salt to taste

For the topping
3 tbsp grated processed cheese
tobasco sauce (optional)

Method

    For the spinach stuffing

    1. Heat the butter in a non-stick pan, add the onions and sauté till the onions turn translucent. Add the green chillies and fry again for a few seconds.
    2. Add the spinach and soda bi-carb and cook for 2 minutes.
    3. Mix the milk with the cornflour. Add to the mixture and cook until the mixture becomes thick. Add salt and mix well. Keep aside.

    How to proceed

    1. Cut each bread slice into three long strips and toast them.
    2. Spread a little spinach mixture on each toast piece.
    3. Sprinkle some grated cheese on top.
    4. Grill in a hot oven at 200°C (400°F) for a few minutes, so as to melt the cheese.
    5. Serve hot with Tabasco sauce.
