An easy but unique soup of cream style corn and coconut milk, flavoured with red chilli flakes and mixed herbs. The combination of coconut milk and red chilli flakes gives the Creamy Corn and Coconut Soup a tropical feel, and a slight touch of Thai cuisine.

Ingredients

1 1/2 cups cream style corn
1 1/2 cups coconut milk (nariyal ka doodh)
1/2 tsp dry red chilli flakes (paprika)
1/2 tsp dried mixed herbs
salt to taste

Method
  1. Combine the cream style corn and coconut milk in a deep non-stick, mix well and cook on a medium flame for 2 to 3 minutes, while stirring continuously.
  2. Add the chilli flakes, mixed herbs and salt, mix well and cook on a medium flame for another 5 to 6 minutes, while stirring occasionally.
  3. Serve immediately.

If you like coconut milk you will love this soup. Coconut milk takes the taste entirely. Clilli flakes and mixed herbs gives a nice flavour to the soup.
