Cream Of Cauliflower And Almond Soup

Ingredients


1 medium sized cauliflower
1 onion
1 potato
2 1/4 cups milk
1 drop almond essence
20 gms coarsely powdered almonds
salt and pepper

For the topping
1 tbsp almond (badam) slivers, lightly roasted
a little cream

Method
  1. Cut the cauliflower, onion and potato into big pieces.
  2. Add 3 teacups of water and cook in a pressure cooker.
  3. When cooked, blend in a liquidiser and strain.
  4. Add the milk to the soup. Add the almond essence and ground almonds and cook for a few minutes.
  5. Add salt and pepper.
  6. Serve hot topped with cream and almonds.

Tips
  1. While reheating, if you find the soup is too thick, add a little milk to thin it.
