Ingredients

Method

  1. Bring vegetable broth to a boil in large saucepan.
  2. Stir in the rice
  3. Cook on high for 5 min.then reduce the heat to medium and simmer until the rice is cooked approximately 35 min.
  4. while rice is cooking,heat the olive oil in a large pan over medium heat.
  5. saute the diced onion,carrot and apple until the onion is soft.
  6. add the celery,garlic chiilie and salt to taste.
  7. squeez the lemon juice over the mixture.
  8. add the cranberries,chopped pecans,cooked rice and vinegar.
  9. heat through and serve hot,warm or cold.
