Cous cous is a pre-cooked wheat derivative available only in selective stores. I have used the more readily available broken wheat in this multi-textured and healthy salad, which is a great alternative to calorie-laden snacks. A delicately flavoured mint dressing perks up this nutrient-rich assortment of vegetables and dalia.

Ingredients

Method
  1. Boil vesselful of water and add the oil and salt to it.
  2. Add the broken wheat and boil for 6 to 7 minutes.
  3. Drain, wash with cold water and drain again.
  4. Add all the remaining ingredients, pour the dressing over it and toss well.
  5. Keep refrigerated for at least 1 hour.
  6. Serve chilled.
