Topped with loads of crunchy cornflakes, these cookies look tantalising and taste brilliant. A mild lacing of lemon juice and vanilla essence enhance the flavour and aroma of the cornflake cookies.

Preparation Time:    Baking Time:  25 minutes   Baking Temperature:  180°C (360°F)    Makes 15 cookies

  1. Preheat the oven at 180°c(360°f).
  2. Put the butter in a deep bowl and beat well using a wooden spoon till smooth and creamy.
  3. Add the castor sugar and mix well.
  4. Add the plain flour, baking powder, lemon juice and vanilla essence and knead using your hands into a smooth dough.
  5. Divide the dough into 15 equal portions and roll each portion into a flat round cookie.
  6. Roll each cookie in the cornflakes and press it well, till they are coated with cornflakes on both the sides.
  7. Place the cookies in a baking tray at enough distance and bake for 20 minutes.
  8. Remove from the oven and allow it to cool completely.
  9. Serve or store it in an air-tight container.

Cornflake cookies.. Just the right crunch.. with a slight sourness to the cookies.. it''s crumbly and crisp.. The cornflakes, adds more crunch to the cookies.. I made this for the kids.. they just loved it.. Thank you for this recipe..

Now that is how a Cookie Crumbles.... A great crunchy texture from the cornflakes, these simple cookies were fun to make and were wiped out in minutes... a great treat for kids who always fuss about finishing their glass of milk...
