Corn stuffed potatoes are wrongly thought of as being fattening. Actually, they are high in fibre and rich in many vitamins, minerals and complex carbohydrates. Just that, they need to be cooked right, and not royally fried! relish this sumptuous meal created by baking potatoes stuffed with a corn filling – this is not only healthier than the fried version but also filling. You can serve it as it is or use it as part of a main dish like sizzler

1/2 cup cooked sweet corn kernels
salt and freshly ground black pepper powder to taste

  4. Divide the filling into 8 equal portions and keep aside.

How to proceed

  1. Stuff each potato half with a portion of the corn filling.
  2. Arrange the stuffed potatoes in a greased baking tray and bake in a pre-heated oven at 200ºc (400ºf) for 10 minutes. Serve hot.

Baked potatoes are always a healthier option than fired potatoes and taste good with corn filling. You can throw in baked beans also.
