What would a meal be without a rice dish! this baked pulao is loaded with yummy sweet corn kernels, and is undoubtedly a favourite with young and old alike.

Ingredients


For The Rice
2 1/2 cups cooked long grained rice (basmati)
1/2 cup milk
1 tbsp butter
salt to taste

For The Corn Layer
1 1/2 cups boiled sweet corn kernels
1/2 tsp cumin seeds (jeera)
1/2 cup chopped onions
1/2 tsp chopped green chillies
1 tbsp oil
salt to taste

Other Ingredients
oil for greasing

For Serving
4 cups kadhi

Method
For the rice

  1. Heat the butter in a pan on a slow flame and add the rice, milk and salt. Cook for 1 minute and keep aside.

For the corn layer

  1. Heat the oil in a pan and add the cumin seeds.
  2. When they crackle, add the onions and fry for a minute.
  3. Add the green chillies and fry again for a few seconds.
  4. Add the corn and salt and cook till the corn is done.

How to proceed

  1. Spread the corn mixture at the bottom of a greased jelly mould.
  2. Spread the rice on top. Press well and cover with an aluminium foil.
  3. Bake in a pre-heated oven at 200°c (400°f) for 10 minutes.
  4. While serving, invert on a plate and serve hot with a kadhi of your choice.
