Ingredients

10 cream cracker biscuits

For The Corn Topping
3/4 cup boiled sweet corn kernels (makai ke dane)
1/4 cup finely chopped onions
2 tbsp finely chopped carrots
2 tbsp finely chopped capsicum
1 tsp finely chopped green chillies
1 tsp lemon juice
1 tbsp oil
salt to taste

For The Garnish
10 tsp grated processed cheese
tomato ketchup

Method
For the corn topping

  1. Heat the oil in a broad non-stick pan, add the onions, carrots, capsicums and cook on a high flame for 2 minutes.
  2. Add the green chillies and sauté on a medium flame for 1 minute.
  3. Add the corn, lemon juice and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  4. Divide the topping into 10 equal portions and keep aside.

How to proceed

  1. Arrange the biscuits on a serving plate, put a portion of the topping on each biscuit.
  2. Serve immediately garnished with 1 tsp grated cheese and drops of tomato ketchup on each biscuit.
