Corn, a typical Mexican ingredient, is used with cottage cheese to make a tasty crepe.

Ingredients


6 Crepes
3/4 cup Mexican Green Sauce

To be mixed into a corn and cottage cheese filling
1 cup cooked corn (makai)
100 gms grated paneer (cottage cheese)
50 gms grated cooking cheese
1 green chilli, chopped
1 tomato, without the pulp
salt to taste

For the baking
3 tbsp grated cooking cheese

Method
How to proceed

  1. Fill the crepes with the corn and cheese filling and fold each one into a triangle.
  2. Arrange in a baking dish and pour the Mexican green sauce over them.
  3. Sprinkle the cheese on top and bake in a hot oven at 200 degree C (400 degree F) for 20 minutes.
  4. Serve hot.

fantastic dish. the green sauce adds so much flavour to the dish. the dish changes completely after baking! Loved it.
