Ingredients

Method
  1. Put the tomatoes in hot water for 10 minutes. Remove the skin and chop.
  2. Heat the oil and fry the crushed garlic for a few minutes.
  3. Add the onion and fry for 1 minute.
  4. Add the capsicum and fry again for 1 minute.
  5. Add the chilli powder and tomatoes and fry again for 1 minute.
  6. Add the corn, brinjal and salt and mix well.

For the baking

  1. Put the vegetable mixture in a baking dish and cover with the white sauce and cheese.
  2. Bake in a hot oven at 200 degree C (400 degree F) for 20 minutes.
  3. Serve hot.

Tips
  1. Prepare tomato puree 3 to 4 hours in advance.
  2. Prepare cooked corn 3 to 4 hours in advance.
  3. Prepare brinjal 3 to 4 hours in advance.
  4. Prepare white sauce 4 to 5 hours in advance.

The recipes says"You have to taste this dish to believe how wonderful it is." I truly agree,I am not very fond of eggplant but loved the fried eggplants with corn and spicy tomatoes topped with white sauce and cheese, I sprinked crushed cheeseling biscuits before baking to get a crunchy top layer.
