Comfort Food Casserole

For The Vegetable Layer
1 cup green peas
1/2 cup cauliflower florets
1/4 cup chopped tomatoes
1 cup chopped bottle gourd (doodhi / lauki)
salt to taste
4 tbsp cooked yellow moong dal (split yellow gram)

For The Fruit Layer
1 cup chopped pineapple
3 dates (khajur) , chopped
1/2 cup freshly grated coconut

For The Garnish
a few roasted cashewnuts (kaju)
a few roasted almonds (badam)

For vegetable layer

  1. Put all the ingredients in a pressure cooker, add some water and salt and pressure cook for 2-3 whistles or till the vegetables are cooked.
  2. Allow the steam before opening the lid. Keep aside to cool.

How to proceed

  1. In a deep serving dish, arrange the vegetables evenly.
  2. Top with the fruits alternately arranging each fruit evenly.
  3. Garnish with nuts and serve immediately.
