Cocoa Fudge Cake (Eggless)

Ingredients


For the cake
1 1/2 cups plain flour (maida)
1/2 cup cocoa powder
1/2 tsp baking soda
1 tsp baking powder
1 1/2 cups powdered sugar
1/3 cup curds (dahi)
1/3 cup milk
1 tsp vanilla essence
1/2 cup melted butter

For the soaking syrup
2 tbsp sugar
3 tbsp rum (optional)

For the icing
1/3 cup sugar
2 tbsp butter
2 tbsp cocoa powder
1/3 cup milk
1/2 cup icing sugar
1/2 tsp vanilla essence

For the decoration
walnuts (akhrot)

Method
For the cake

  1. Mix the curds, milk, essence, and butter.
  2. Beat in the dry ingredients together to form a smooth slack mixture.
  3. Pour into two greased and dusted 225 mm. (9") diameter tins and bake in a moderately hot oven at 190 degree C (375 degree F) for 25 to 30 minutes. Cool.

For the soaking syrup

  1. Boil the sugar and water until it becomes almost half in volume.
  2. Cool and add the rum.

For the icing

  1. Mix the sugar, butter, cocoa and milk.
  2. Bring the mixture to the boil and boil for around 2 minutes while stirring all the time.
  3. Remove from the heat.
  4. Beat in the icing sugar and vanilla essence till a smooth spreading consistency is obtained.

How to proceed

  1. Sprinkle the soaking syrup over the cakes.
  2. Sandwich the cakes with the icing and cover the sides and top with icing.
  3. Decorate with walnuts.
  4. Cut into slices and serve.
