Clear Vegetable Stock ( Healthy Soups and Salads)

Vegetable stock is a subtly flavoured liquid made by simmering water with some vegetables and spices. It can be used as a base for different soups and sauces instead of water to give it a better flavour profile wlike healthy brown onion soup, asparagus soup and green peas skin soup.

1/2 cup onions , quatered
1 cup roughly chopped carrots
2 stalks celery (ajmoda) , roughly chopped
3 to 4 coriander (dhania) stems
1 tsp black peppercorns (kalimirch)

  1. Place all the ingredients in a large pan and add 6 cups of water.
  2. Bring to a boil and then lower the heat.
  3. Cover with a lid and simmer for 20 minutes till the vegetables have released their flavours.
  4. Cool, stain and keep aside.

Flavourful stock which can be used in making many soup recipes...I made one Salsa Bean soup using this stock and made cutlets using leftover no wastage!!

Use this clear stock made of onions, carrots, celery and coriander for soups and also when cooking vegetables which are made with zero oil
