Chocolate Coconut Fancies

Ingredients


140 gms plain flour (maida)
1 tbsp cocoa powder
85 gms margarine or butter
85 gms powdered sugar
a pinch of salt
1 tsp vanilla essence
vanilla butter icing
dessicated coconut
cochineal
a little cocoa powder

Method
  1. Sieve the flour, cocoa and salt.
  2. Cream the margarine and sugar very well until light and fluffy.
  3. Add the essence and mix well.
  4. Add the flour and mix well until it forms a dough. Add a little milk if there is difficulty in making a dough.
  5. Turn the dough on to a floured board and roll to about 6 mm. (1/4") thickness.
  6. Cut out rounds with a 50 mm. (2") diameter round cutter.
  7. Arrange on a greased baking tim and bake in a moderate oven at 350°F for 20 minutes.
  8. Cool the biscuits. Sandwich them with butter icing and also apply the icing on the sides.
  9. Add a little cochineal to the desiccated coconut. Mix well and roll the biscuits in the mixture.
  10. Add a little cocoa powder (or any colour) to the butter icing and pipe icing over the biscuits.
