Chocolate Cinnamon Peaches

If you are looking for something sweet but quick and easy to prepare after an elaborate Italian meal, then this is it! Peach halves stuffed with a chocolate cinnamon mixture cooked in wine and butter taste delicious when served with a scoop of ice-cream. Cook this recipe just before serving and of course and serve it hot for a deliciously wicked end to a meal. You can vary the peaches with canned pineapple or pears to make a new recipe each time.

Ingredients


8 halved canned peaches
4 crushed digestive biscuit
1 1/2 tbsp grated dark chocolate
2 tbsp honey
1/2 tsp grated orange rind (optional)
1/4 tsp cinnamon (dalchini) powder
1 tbsp cream
3/4 cup white wine
1 tsp butter
4 scoops Vanilla Ice-cream to serve

Method
  1. Combine the crushed biscuits, chocolate, honey, orange rind, cinnamon powder and cream in a bowl and mix well.
  2. Fill the cavities in the peach halves with this mixture, mounding it up slightly.
  3. Melt the butter in a large non-stick pan, arrange the stuffed peaches in the pan with the stuffed side facing upwards and pour the white wine over the peaches. Cover with a lid.
  4. Cook on a very slow flame for about 7 to 8 minutes and pour the cooking liquid over the peaches at regular intervals while they are cooking.
  5. Serve hot with vanilla ice-cream.
