Deep fried burritos with a filling of refried beans, lettuce, cottage cheese accompanied with sour cream and guacamole.

Ingredients

Method
  1. Heat the refried beans and spoon about 2 tablespoons onto the centre of each tortilla.
  2. Spoon about 2 tablespoons of the filling mixture over the beans in the tortilla.
  3. Fold in the sides to make a parcel, making sure that all the filling is enclosed.
  4. Repeat for the remaining tortillas, beans and filling.
  5. Heat oil in a large frying pan and when hot, put the chimichangas, folded side down first. Cook on both sides until crisp. Drain on absorbent paper.
  6. Spoon guacamole over the top of each chimichanga and drizzle sour cream on it. Sprinkle chopped tomatoes on top and serve immediately.
