Chilli Bean Soup ( Delights Of Vegeterian Cooking Recipe)

A spicy hot soup. Ideal for monsoon days.

Makes 6 to 8 servings


Ingredients

900 gms tomatoes
1 chopped onion
1 capsicum , chopped
3 spring onions , including greens , finely chopped
1 small can (220 grams) baked beans
3 tbsp white sauce
3 tbsp sugar (approx.)
1/2 tsp chilli sauce
2 tbsp oil
salt to taste

To Serve
grated processed cheese
chilli sauce

Method
  1. Keep aside one whole tomato. Cut the rest into big pieces, add 5 teacups of water and cook. When cooked, strain the soup using a sieve.
  2. Chop the remaining tomato.
  3. Heat the oil in a vessel and fry the onions for 1 minute. Add the capsicum and spring onions and fry for 2 minutes.
  4. Add the preapred tomato soup and boil for 10 minutes.
  5. Add the chopped tomato, baked beans, white sauce, sugar, chilli sauce and salt and cook for a few minutes.
  6. Serve hot with grated cheese and chilli sauce.
