Chilled Cherry Soup

A recipe from Hungary. This pink soup gets more nourishing with the addition of cherry seeds.

3/4 cup fresh cherries
1 cup thick yoghurt
1 tbsp lemon juice
2 to 3 tsp sugar
25 mm (1") piece cinnamon (dalchini)
1/2 tsp lemon rind

  1. Remove the stones from the cherries.
  2. Blend the cherries, yoghurt and lemon juice together in a blender.
  3. Break the stones and take out the seeds.
  4. Mix the cherry seeds, sugar, cinnamon and lemon rind with 3 tablespoons of water.
  5. Boil the mixture for 1 minute and add to the soup mixture.
  6. Cool, add a little water if the soup is too thick and put to chill. Serve chilled.

  2. Chilled Strawberry soup. Instead of cherries, use the same quantity of strawberries and proceed as above.
