Ingredients



For the flans
1 recipe Eggless Sponge Cake

For the cherry filling
2 cups whipped cream
1 small can cherries
3 tsp cornflour
2 tsp sugar
2 tsp lemon juice
a few drops cochineal (red) colour
1 to 2 drops almond essence

To be mixed into a soaking syrup
3/4 cup water
2 tbsp sugar

For the garnish
flaked almonds (badam)

Method

    For the flans

    1. Spoon the batter into 5 small flan tins and bake in a hot oven 200 degree C (400 degree F) for 15 to 20 minutes.
    2. Remove from the tins and cool.

    For the cherry filling

    1. Stone the cherries. Keep aside the syrup.
    2. To the fruit syrup, add the cornflour and sugar.
    3. Boil for a little time. Stir till it becomes thick. Then add the cherries, lemon juice, colour and essence.

    How to proceed

    1. Soak the flans with the sugar syrup.
    2. Pipe whipped cream around the edge of the flans to make a border.
    3. Spoon the filling mixture inside the cream border.
    4. Garnish with flaked almonds.
    5. Serve cold.

    Tips
    1. You can make 1 big flan instead of 5 small ones.
