Cheesy Tarts

Ingredients


For the tart cases
100 gms (4 oz.) plain flour (maida)
50 gms (2 oz.) soft butter
a pinch of salt
ice cold water to make a dough

For the cheese filling
5 to 7 tbsp cooking cheese
1 tbsp chopped onion
1/2 tsp chopped green chilli
1 tbsp plain flour (maida)
3/4 cup milk
1 tsp mustard (rai / sarson) powder mixed with a little water
2 tbsp butter

Method
For the tart cases

  1. Sieve the flour with the salt.
  2. Rub in the butter and make a dough by adding 1 tablespoon of ice-cold water. Knead well.
  3. Roll out the dough to about 3 mm. (1/8") thickness.
  4. Cut with a fluted cutter of desired size.
  5. Press into tart cases and prick with a fork.
  6. Bake blind in a hot oven at 230 degree C (450 degree F) for 10 to 12 minutes.
  7. Cool the tart cases.

For the cheese filling

  1. Heat the butter and fry the onion on a slow flame for 2 minutes.
  2. Add the green chilli and flour and fry again for 1/2 minute.
  3. Add the milk. Go on stirring and cooking the mixture until it becomes thick.
  4. Add the mustard and 5 tablespoons of the cheese and mix.

How to proceed

  1. Fill each tart case with a little cheesy mixture. If you like, sprinkle the balance cheese on top.
  2. Grill for 3 to 4 minutes.
  3. Serve hot.
